Traditionally enjoyed during celebrations, this cake features a sweet yeast dough filled with cream and topped with caramelized almonds and honey. Its delightful combination of textures and flavors makes it a favorite in German bakeries and homes alike, and it has inspired variations worldwide, often incorporating different nuts or fillings.

Mix 2 egg yolks, 50g sugar, and 1 teaspoon vanilla extract in a bowl.
Add 360ml milk and mix well.
Stir in 50g corn starch and mix well.
Cook the mixture over medium heat while mixing continuously until it thickens, then cover and set aside.
In a saucepan, melt 75g butter over medium heat, then add 65g sugar and 3 tablespoons honey, letting it melt and bubble.
Add 60ml heavy cream and mix well, then stir in 100g flaked almonds and cook for another 2-3 minutes before setting aside.
In a bowl, mix 150g plain flour, 1 teaspoon baking powder, ¼ teaspoon baking soda, and ¼ teaspoon salt, then set aside.
In another bowl, whisk 3 eggs with 130g sugar for 2-3 minutes.
Add 120ml vegetable oil and whisk for 1 minute.
Gently mix in the flour mixture, then add 1 teaspoon vanilla extract and 60ml milk, mixing gently.
In a 20x20 cm (8x8 inch) baking pan, add half of the batter and bake in a preheated oven at 175°C (350°F) for 10 minutes.
Spread the custard over the baked layer, then pour the rest of the batter on top.
Bake again at 175°C (350°F) for 15 minutes, then spread the nut mixture evenly on top and bake for another 10-15 minutes.
