Heat milk with butter until warm, then add yeast (do not add yeast to hot mixture).
Mix flour and salt in a bowl.
Combine the milk mixture with flour and mix for about 7 minutes until gluten develops.
Let the dough rest and rise.
Prepare the pastry cream using pudding mix: heat milk, add sugar, and mix pudding powder with a little milk.
Cover the pudding with saran wrap touching the surface to prevent a skin from forming and let it chill.
Prepare the almond topping by mixing sugar, butter, heavy whipping cream, and honey, then add almonds.
Spray a 10-inch cake pan and roll out the proofed dough to fit the pan.
Add the almond topping to the dough and let it rest for another 10 minutes.
Bake for about 30 minutes until golden brown, then remove the ring from the pan immediately after baking.
Whip heavy cream with a stabilizer until stiff peaks form, then set aside.
Once the pudding has cooled, whip it again to smooth out any clumps.
Gently fold the whipped cream into the pudding mixture.
Cut the baked cake horizontally, pre-slice the top to prevent cream from oozing out when serving.
Place the bottom layer of the cake in a cake ring, spread the cream mixture on top, and then place the pre-sliced top layer back on.
Refrigerate the assembled cake for at least 1 hour to set the cream.
