2 stalks of lemon grass
1 - 2 inches of ginger
1/2 inch galanga (optional)
10 shallots or 2 yellow / red onion
2-3 cloves of garlic
2 sticks of cinnamon
3 anise seeds
4-5 cardamons
3-4 cloves
curry leaves
3 tablespoon of Baba's, Adabi or other Malaysian Meat/Chicken Curry Powder
3 tablespoon of Fish / Shrimp / Seafood Curry Powder
1 cup of vegetable oil
2-3 liter of water
tamarind paste or juice
salt for seasoning
1/2 chicken, cut in small pieces
1/2 packet of uncooked, white fishballs
1/2 packet of fried round fish ball
1/2 packet of fried fish tofu
1/2 pound or more whole shrimp (with heads on, unpeeled)

Heat a large, tall pot. Add oil and when the oil is hot enough, sauté the sautéing ingredients (cinnamon sticks, cloves, cardamon, anise star & curry leaves). Strain & remove these if desired, otherwise add the blended ingredients of lemon grass, ginger, galanga & onions.

Once yellowish & the oil breaks, add the curry paste. Bring to a boil and add chicken.

Bring to another boil & add coconut milk, water and fishballs.

After boiling, add tamarind juice and salt. Season to taste. Add whole shrimp and then simmer.

For noodles, if using spaghetti, follow cooking directions on spaghetti packet. Add oil after straining to reduce stickiness.
