In a mixing bowl fitted with a whisk, combine sugar, eggs, vanilla, and a pinch of salt. Beat until sugar dissolves and eggs double in volume, becoming white and foamy.
Gradually add oil to the mixture.
Switch to a paddle attachment and add flour, lemon zest, and baking powder. Mix until a soft dough forms.
If the dough is too sticky, add an additional half cup of flour.
Transfer the dough to a non-stick surface and gather it without overworking it.
Place the dough in a Ziploc bag and let it rest in the fridge for about half an hour.
Prepare a working surface with parchment paper and sprinkle lightly with flour.
Roll out the dough to about half an inch thick.
Cut the dough into different shapes using cookie cutters.
Brush the cookies with a mixture of egg yolks and 2 tablespoons of oil for color.
Sprinkle sugar and colorful sprinkles on top of the cookies.
Bake the cookies at 355°F for about 15 to 20 minutes until golden and crunchy.
