400 G cooked rice
400 G cooked black beans
150 ml liquid reserved from cooked beans
1 onion finely chopped
2 cloves garlic chopped
0.5 green pepper chopped
1 tsp cumin powder
2 tbsp Tabasco or any type of chili sauce
4 tbsp olive oil
2 tbsp coriander chopped

Step one: Gather all the ingredients to serve four to six people.

Step two: Fry the onions and peppers. Have a saucepan ready on medium heat, add the olive oil and allow it to warm through. Once hot, add the onion and fry for a few minutes until it gains a little color, stirring occasionally. Then add the garlic and the green pepper and sweat them for a few more minutes.

Step three: Add the rest of the ingredients. Add the cooked rice, cooked black beans, cumin powder, Tabasco or chili sauce, and season with salt and pepper. If the mixture is a little on the dry side, add a little bit of the liquid reserved from cooking the beans. Mix together well until thoroughly warmed through, then add the chopped coriander and mix it in.

Step four: Your Gallo Pinto is now ready to serve.
