Prepare the ingredients: cooked rice from the previous day, calabresa sausage, grated ginger, chopped green onions (divided into two parts), and approximately 350g of beef.
Cut the beef into medium-sized pieces, ensuring they are not too small to avoid shrinking during frying.
Season the beef with a generous tablespoon of yellow bean paste, garlic powder, and black pepper. Mix well and let it rest for about 15 minutes to absorb the flavors.
Beat 2 eggs with a pinch of salt and optional grated ginger, then prepare an omelet in a small amount of oil.
Fry the calabresa sausage in the same pan until well cooked.
Add the white part of the chopped green onions to the sausage and fry until fragrant.
Add the seasoned beef to the pan and mix everything together until the beef is well cooked.
Add the cooked rice to the pan, mixing thoroughly with the meat and other ingredients. Let it fry for about 5 minutes, stirring constantly to prevent burning.
Squeeze fresh ginger into the rice mixture for added flavor.
Add the omelet to the rice mixture and stir well to combine.
Pour in soy sauce and oyster sauce to taste, mixing everything together.
Finally, add the remaining green onions and stir to combine everything well.
