Roasted Tomatoes with Garlic and Rosemary

2 cups red tomatoes
1 cup cherry tomatoes on the vine
1 cup grape tomatoes
3 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon fresh pepper
1 tablespoon south of France herb mix by Lemaster family kitchen
3 cloves fresh garlic

Cut the larger red tomatoes in half.

Place all varieties of tomatoes into a mixing bowl.

Drizzle a little bit of olive oil over the tomatoes.

Add a couple pinches of salt and grind fresh pepper to taste.

Sprinkle generously with the south of France herb mix.

Press in 2 to 3 cloves of fresh garlic into the bowl.

Set the bowl aside and grab a 10-inch cast iron skillet.

Apply a light layer of olive oil to the cast iron skillet to season it.

Spread any pressed garlic from the mixing bowl onto some of the tomatoes in the skillet.

Preheat the Weber Q 1200 grill for about 15 minutes.

Lay down a piece of aluminum foil and a roasting rack on the grill.

Place the skillet full of tomatoes on top of the heat shield and roasting rack.

Shut the lid and let the tomatoes roast at 350°F for 45 minutes.
