Rinse the cassava and soak it in water to remove impurities.
After rinsing, let the cassava sit for a few minutes until the water separates from the dough.
Pour off the water and keep the dough.
Place the dough in a clean bag and let it sit overnight to allow excess water to drain out.
The next day, check the dough; it should be fluffy and clean.
Divide the dough into two plastic bags for cooking.
Prepare a pot of boiling water and place a metal rack at the bottom to prevent the bags from sticking.
Put the bags with the dough into the pot and cover it.
Cook for 1 hour and 30 minutes.
After cooking, check if the dough is fully cooked by cutting it open; it should not be white inside.
