Today, variations abound worldwide, with many regions adding their unique twists, making it a versatile dish enjoyed by many.

Sift 2 cups of flour into a bowl.
Add 1/2 teaspoon of salt to the flour and mix.
In a measuring cup, combine 2 large eggs and 1/2 cup of cold water; mix together.
Pour the egg and water mixture into the flour and salt mixture.
Stir the mixture until combined, then knead the dough by hand for 5-10 minutes until smooth.
If the dough feels dry, add a little water; if sticky, dust with flour.
Shape the dough into a long piece and cover with plastic wrap; let it rest for 15-20 minutes.
Unwrap the rested dough and dust the work surface with flour.
Cut the dough into three pieces and roll out the first piece to desired thickness.
Cut the rolled dough into sheets or strips for lasagna noodles.
Bring a pot of water to a boil, add 1/2 teaspoon of sea salt and a drizzle of olive oil.
Once boiling, gently place the noodles into the water and boil for 5-6 minutes.
Remove the noodles and place them on a plate to cool.
In a large skillet, add 4-5 cups of ground beef and cook until browned, adding oil if necessary.
Add a grated carrot to the skillet with the ground beef.
In a bowl, combine 500 ml of cottage cheese, 1 large egg, and a pinch of sea salt; mix until smooth.
Add 1 teaspoon of Italian spice seasoning and 1 medium chopped onion to the beef mixture and stir.
