3 tablespoons miso paste
1 (28-oz.) can tomato sauce

6 tablespoons unsalted butter
½ cup all-purpose flour
3 cups whole milk
32 ounces ricotta cheese
1 pound grated mozzarella cheese
1 ½ teaspoons garlic powder
1 ½ teaspoons dried oregano
1 pound lasagna sheets
½ cup freshly grated parmesan cheese

Heat the olive oil in a large saucepan over medium-high. Add onions and cook until soft, 3 to 4 minutes.

Stir in the garlic and cook until fragrant, then add the beef and pork. Cook, stirring and breaking up any clumps, until browned, about 8 minutes.

Add the tomato paste and cook 2 minutes longer, then stir in the miso and cook 2 minutes more.

Pour in the can of tomato sauce, then fill the can halfway with water and add that, too. Simmer until thick, about 25 minutes. Season with salt and pepper and set aside.

Melt the butter over medium. Add the flour and cook 2 minutes. Gradually add the milk, whisking constantly, until thick. Season to taste with salt and pepper, then cool slightly.

In a large bowl, stir together the ricotta, half of the mozzarella, the garlic powder, and oregano. Season with salt and pepper and set aside.

Bring a large pot of generously salted water to a boil. Add lasagna sheets and cook until al dente, about 10 minutes. Drain, and run under cold water, then toss gently with olive oil.

Heat oven to 350°. Spread some of the meat sauce into the bottom of a 9-by-13-inch baking dish.

Lay three sheets of lasagna on the bottom of the baking dish. Drizzle and spread some bechamel evenly over the pasta and dollop on some of the ricotta mixture.

Sprinkle with a little of the mozzarella, then top with 3 more sheets of pasta and continue layering.

Once you get to the final layer, top with remaining meat sauce and mozzarella cheese, plus the parmesan.

Place the baking dish on a baking sheet and bake for about 1 hour, or until golden and bubbling.

Let sit for at least 15 minutes before serving.
