Peel the Fuji apples and one Granny Smith apple.
Cut off the ends around the core of the apples, then slice them into smaller pieces like for an apple pie.
Place the sliced apples in a bowl and coat them with lemon juice or pineapple juice if not using immediately.
Pour melted unsalted butter over the apples.
Add granulated sugar, brown sugar, cinnamon, a pinch of sea salt, and corn starch to the apples and mix well to coat.
Transfer the apple mixture to a casserole dish or a 13 by 9 inch dish.
Bake the apples in the oven at 375 degrees for about 45 minutes, stirring every 15 minutes to incorporate the juices.
Season the bone-in pork chops with sea salt and cracked black pepper, ensuring even coverage.
Heat a large cast iron skillet over high heat and add olive oil until it begins to smoke.
Add the pork chops to the skillet, ensuring they are not touching each other, then reduce the heat to medium or medium-low.
Add pads of unsalted butter and thyme sprigs to the skillet with the pork chops.
Cook the pork chops for about six minutes on each side, moving them around to ensure even browning.
Baste the pork chops with the fat drippings from the skillet.
Remove the pork chops from the skillet once cooked to the desired internal temperature.
Plate the pork chops and top with a spoonful of the baked apples, allowing the juices to run over the pork.
Garnish with fresh thyme leaves.
