1

Heat 1 tbsp of oil in a big wok.

2

Add 1 tsp of chopped garlic, 1 tsp of chopped ginger, and 1 chopped green chilli to the oil and stir for half a minute.

3

Add chopped onions and cook for half a minute.

4

Add grated carrot and cauliflower, and cook on medium to high flame for 1 minute without fully cooking the vegetables.

5

Add 1 medium sized capsicum and cook for another minute.

6

Add 2 tbsp of green onions and mix well.

7

Add 1 tsp of soya sauce and 1 cup of water, and bring to a boil while keeping the vegetables crunchy.

8

Add fine semolina to the boiling mixture, stirring to avoid lumps, and cook on low flame for 4-5 minutes until it forms a dough-like consistency.

9

Remove the mixture from heat and transfer to a separate bowl to cool down quickly.

10

Prepare a chutney by soaking 1/3 cup tamarind in hot water, squeezing it out, and mixing it with 1-2 tsp green chilli sauce, grated fresh garlic, 1 tbsp sugar, and 1 tsp salt.

11

Boil and mash 2 potatoes and mix with 100 gms grated paneer, adding 1 tsp salt and adjusting to taste.

12

Form the mixture into bite-sized balls or squares, making about 15 bites.

13

Place the bites in the freezer for some time to make them easier to handle.

14

Prepare a thick slurry with 4 tbsp all-purpose flour and 150 ml water, whisking to remove lumps.

15

Coat each bite in the slurry, removing excess, then coat in Panko breadcrumbs.

16

Freeze the coated bites for more than a month if desired, ensuring they are not stacked directly on top of each other.
