Sancocho Trifasico

1 pound chicken breast
1 pound pork shoulder
1 pound pork spine
2 green plantains
5 potatoes
bell pepper

Heat water in a pot and add some chopped long onion.

Add a pinch of salt and the tougher meat pieces (pork spine). Cover and cook for 30 minutes.

In a separate bowl, prepare a mixture for serving with the sancocho: add chopped onion, bell pepper, cilantro, and a bit of salt. Reserve this mixture.

In another pot with hot water, add the pork meat and bones, followed by the pork spine, and season with garlic and salt. Cover and let it boil for 30 minutes.

After 10 minutes of cooking the pork, add the chicken breast and cover again.

After 20 minutes, add the softened meat, then pour in the broth and add the plantains, cassava, potatoes, and corn cob. Cover and cook until the ingredients soften for about 30 minutes.

After 30 minutes, add the criolla potatoes and any remaining ingredients, cover, and let it cook for an additional 10 minutes.

Once done, add cilantro and prepare to serve the sancocho.
