STOLLEN RECIPE: The absolute best stollen you've ever had for the holidays!
Recipe Information
Stollen
Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.
Make a sponge by mixing part of the bread flour, yeast, and warm milk in a bowl.
Let the sponge stand for about 10 minutes to activate the yeast.
Add the remaining bread flour, granulated sugar, and room temperature butter to the sponge.
Zest one small orange and half a lemon, adding the zest to the mixture.
Add a little additional milk to the mixture for hydration.
Mix the ingredients together using a paddle attachment until incorporated.
Add salt after the mixture is combined to prevent it from pulling moisture from the flour.
Switch to a dough hook and knead the dough on medium-high speed until gluten develops.
Perform the window pane test to check gluten development.
Let the dough rest for about 10 minutes before kneading in the mix-ins.
