4 cups bread flour
1 package active dry yeast (2 1/4 tsp)
1 cup milk
1/2 cup granulated sugar
1/2 cup unsalted butter
2 tablespoons orange zest
2 tablespoons lemon zest
1/2 tsp salt
1/2 cup raisins
1/2 cup walnuts
1/2 cup pecans
1/2 cup almonds
1/4 cup candied orange zest

Make a sponge by mixing part of the bread flour, yeast, and warm milk in a bowl.

Let the sponge stand for about 10 minutes to activate the yeast.

Add the remaining bread flour, granulated sugar, and room temperature butter to the sponge.
