Cut the potatoes into smaller pieces if desired.

Add 6 cloves of garlic, sliced in half.

Pour in a generous amount of olive oil.

Add salt to taste.

Add fresh oregano (or dried oregano if preferred).

Chop fresh rosemary and add to the mixture.

Mix all the ingredients together well.

Place the mixture in a baking pan.

Roast in the oven for 1 hour to 1 hour and 30 minutes.
