Originating from the vibrant culinary traditions of Jamaica, stewed beef is a comforting and flavorful dish often enjoyed during family gatherings and special occasions. The use of spices like allspice and the heat from scotch bonnet peppers reflect the island's rich heritage. Today, this dish is celebrated not only in Jamaica but also in Caribbean communities worldwide, with variations that include different meats and vegetables.

Both provide heat but with different flavor notes.
Wash and rinse 2 lbs of beef with limes to ensure freshness.
Season the beef with salt, black pepper, chief jerk seasoning, and steak seasoning rub.
Add green seasoning, which includes blended scallion, thyme, garlic, and onion.
Incorporate browning (caramelized sugar) for color.
Massage all the seasonings into the beef to ensure it's well coated.
Allow the beef to marinate for at least 1 hour.
Add a small amount of cooking oil to a pot and add sugar to caramelize it.
Once the sugar starts to foam, add the marinated beef to the pot.
Cover the pot and let the beef cook in its own juices for about 7 to 10 minutes.
After about 8 minutes, check that the beef has produced juices and allow it to cook until you hear sizzling.
Add the chopped tomatoes, bell peppers, garlic, onion, skeleton, thyme, and crushed pimento seeds to the pot.
Pour in hot water to maintain cooking temperature and cover the pot.
Reduce heat to the lowest setting and slow cook for about 50 minutes or until the beef is tender.
After 1 hour, check the tenderness of the beef and add ketchup to thicken and enhance flavor.
Add optional carrots, bell peppers, fresh thyme, and a whole pepper to the pot.
Cover and cook for an additional 5 minutes to finish.
Total cooking time is about 1.5 hours.
