Sunflower seed butter is often less expensive and nut-free.

Maple syrup provides a similar sweetness with a different flavor.

Steam rice until cooked, using sushi rice or any short/long grain rice with 1.3 to 1.5 times the water.

Add a vanilla bean pod and a scant tablespoon of brown sugar to the rice and stir to mix.

Ensure the rice becomes sticky and has the desired consistency.

Pack the cooked rice tightly into a mold to form the first layer.

Mix almond butter with a little maple syrup to reduce bitterness.

Spread a thin layer of the almond butter over the packed rice layer.

Slice organic dates with scissors, removing the seeds, and line them up on top of the almond butter layer.

Spread another layer of steamed rice over the dates to finish the cake.

Cut parchment paper to fit the mold and press it down to pack the rice efficiently.

Cool down the rice cake before serving.
