German Beef Rolls Rouladen

Grape juice can provide sweetness without alcohol.
Prepare beef thin slices according to the number of people, usually 2 per person.
Season the beef slices with salt and black pepper.
Spread mustard on the beef slices.
Optionally, add bacon, pickled cucumber, onions, and carrots on top of the beef slices.
Roll up the beef slices tightly and secure with cooking twine.
In the Instant Pot, heat olive oil and butter.
Sauté chopped onions, carrots, and celery until soft.
Add garlic and sauté briefly.
Pour in red wine (if using) and scrape the bottom of the pot to deglaze.
Add beef stock, bay leaves, and cinnamon stick (if using).
Return the beef rolls to the pot and seal the lid.
Pressure cook for 30 minutes, then allow for natural pressure release for 10-15 minutes.
