Prepare the marinade by mixing olive oil, minced garlic, lemon juice, chopped oregano, salt, black pepper, and red pepper flakes in a bowl.
Add white wine and honey to the marinade, whisking until well combined.
Place the whole chicken in a large resealable bag or dish and pour the marinade over it, ensuring the chicken is well coated.
Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Preheat the grill to medium-high heat, ensuring the grates are clean and oiled.
Remove the chicken from the marinade, allowing excess to drip off, and discard the marinade.
Place the chicken on the grill, breast side down, and cook for 15-20 minutes until it develops grill marks.
Flip the chicken and reduce the heat to medium, cooking for an additional 30-40 minutes, or until the internal temperature reaches 165°F.
Baste the chicken with balsamic vinegar during the last 10 minutes of cooking for added flavor.
Remove the chicken from the grill and let it rest for 10 minutes before carving.
Garnish with fresh parsley before serving.
