Chicken breast is leaner and often less expensive than pork chops.
Preheat the Ninja Foodi pressure cooker on high sear sauté for about 2-3 minutes.
Add 2-3 tablespoons of olive oil to the pot to coat the bottom.
In a large zip lock bag, combine 1/2 cup of all-purpose flour with 1 1/2 teaspoons of fine grind sea salt, 1 teaspoon of black pepper, 1 1/2 teaspoons of garlic powder, 1 1/2 teaspoons of onion powder, 1/2 teaspoon of dried thyme leaves, and 1/2 teaspoon of dried rosemary leaves; mix well.
Add 3 pork chops to the bag and toss to coat them in the seasoned flour.
In the heated pot, add the first batch of pork chops in a single layer and sauté for about 2-3 minutes on each side until nicely browned.
Once browned, stack the pork chops on top of each other in the pot and add the remaining pork chops to the bag to coat them in flour.
Deglaze the pot by adding 3/4 cup of chicken broth, swirling to lift any browned bits from the bottom.
Turn off the pressure cooker to prevent burning off the liquid.
Add 1 sliced sweet onion on top of the pork chops in the pot.
Add 12 ounces of quartered mushrooms on top of the onions (optional).
Sprinkle the remaining flour from the bag on top of the onions and mushrooms without stirring.
Place 1 1/2 to 2 lbs of whole peeled russet potatoes on a rack above the pork chops and gravy mixture in the pot.
Seal the pressure cooker and cook on high pressure for 15 minutes.
After cooking, allow for a natural release of pressure for 10 minutes before manually releasing any remaining pressure.
Remove the potatoes and mash them with butter and milk until creamy and smooth, seasoning with salt to taste.
Serve the pork chops with gravy over the mashed potatoes.
