Stir fry your topping and let cool. A popular stir fry for the topping might be ground pork, chopped Chinese mushroom, green onions, chives, peas, chopped onions, etc. Add a dash of salt, soy sauce, Chinese oyster sauce, sesame oil. Stir fry and put ingredients in a bowl. Let ingredients cool off before using.

Put glutinous rice flour in a big mixing bowl. Add boiled yam or sweet potato. Gradually add 1/2 cup of boiled water and mix all ingredients together using a fork or chopsticks. Then use hands to knead dough for 2 to 3 minutes. Add more water if required.

Roll dough to lengthen. Break off into 6 to 8 small pieces. Roll each piece of dough. Then press dough from the center out to form a round sheet. Keep the center of dough slightly thicker.

Put 1 tablespoon or more of filling into the center of the dough. Fold dough in half and seal into a half moon. Pinch the edges to seal in filling.

Preheat cooking oil until hot. Deep fry each Chinese dumpling for 2 to 3 minutes or more until cooked. Turn over each dumpling a few times to make sure it's cooked evenly on both sides. Remove onto a napkin to soak up any excess oil. Serve on a plate or a shallow wide bowl. Add a little light soy sauce if you like.
