Clean the conch in a solution of lemon juice, vinegar, and water.
Slice the conch into thin pieces.
Marinate the conch with zero salt all-purpose seasoning, onion powder, and olive oil for 15 minutes.
Boil the conch in 4 cups of water for 2 to 2.5 hours on medium-low heat until tender.
Chop scallion, red and green bell peppers, thyme, and scotch bonnet pepper for the sauce.
Blend the chopped vegetables with olive oil, salt, and allspice berries.
Sauté garlic in olive oil for less than a minute, then add tomato paste and the blended seasoning.
Add the cooked conch to the pot and mix with the sauce.
Add salt and lemon juice to taste, along with more blended seasoning if needed.
Add conch broth gradually to thicken the sauce, along with additional vegetables and a whole scotch bonnet pepper for flavor.
Cover and simmer on low heat to allow flavors to meld.
