Parmesan Crusted Chicken

1.5 pounds chicken breast
2 pounds red potatoes
baby carrots

2 tablespoons garlic
3/4 cup plain breadcrumbs
1/3 cup grated Parmesan cheese

Cut 1.5 pounds of chicken breast into 1-inch strips.

Parboil 2 pounds of red potatoes cut into bite-sized pieces and baby carrots until just starting to get tender.

Drizzle olive oil over the chicken strips.

Add 2 tablespoons of garlic to the chicken.

Season the chicken with salt and pepper.

Mix in 3/4 cup of plain breadcrumbs and 1/3 cup of grated Parmesan cheese with the chicken.

Prepare a baking sheet by spraying it with cooking spray.

Place the chicken mixture onto the sprayed baking sheet.

Drizzle olive oil over the parboiled potatoes and carrots.

Add garlic, salt, and pepper to the potatoes and carrots, but do not add breadcrumbs.

Sprinkle a couple of tablespoons of Parmesan cheese over the potatoes and carrots.

Place the baking sheet in a preheated oven at 425°F for about 25 minutes or until the chicken reaches an internal temperature of 165°F.
