Prepare chicken breasts (not thin sliced).

Season chicken breasts with avocado oil and all-purpose seasoning on both sides.

Heat a 12-inch cast iron skillet over medium-high heat.

Sear the chicken breasts in the skillet for about 4 minutes on each side.

Transfer the chicken to the oven and bake at 375°F for 6 to 8 minutes.

In a measuring cup, combine 1 cup of ranch dressing and 1 cup of freshly shredded parmesan cheese, mixing until thick and creamy.

Once the chicken reaches an internal temperature of 165°F (pulled at 162°F), remove from the oven and let it rest.

Spread the ranch and parmesan mixture over the chicken, then add freshly shredded monterey jack cheese on top.

Sprinkle panko breadcrumbs over the cheese and broil until the breadcrumbs are toasted and cheese is melted, about a few minutes.

Remove from the oven and add more parmesan cheese on top and freshly chopped parsley for garnish.
