parmesan rind

Infuse olive oil on low heat with freshly sliced garlic, fresh basil, chili flakes, and Italian seasoning for about 5 minutes.

Turn heat to medium-low and lightly cook the garlic until aromatic.

Blend San Marzano tomatoes until smooth and add to the pan with the infused oil.

Stir in 1 cup of filtered water and cook down to create a thick sauce.

Add a parmesan rind to the sauce for extra flavor if available.

Prepare chicken by cutting breasts in half and pounding them thin.

Salt the chicken, dip in egg wash, and coat with almond meal for breading.
