Keto Chicken Parmesan

3 cups shredded chicken
1 cup low sugar tomato sauce
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese
1/2 cup Parmesan cheese
1/2 cup pork rind crumbs
1/4 cup Parmesan cheese for topping

In a bowl, add 3 cups of shredded chicken.

Add 1 cup of tomato sauce, 1 teaspoon of Italian seasoning, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1 cup of shredded mozzarella cheese, 1/2 cup of ricotta cheese, and 1/2 cup of Parmesan cheese to the bowl.

Mix all the ingredients together until well combined.

Take a 9x9 casserole pan and spray with avocado oil if not using a non-stick pan.

Transfer the chicken mixture into the casserole pan and smooth it out into an even layer.

In a separate bowl, mix 1/2 cup of pork rind crumbs with 1/4 cup of Parmesan cheese for the topping.

Sprinkle the pork rind mixture evenly over the top of the casserole.

Optionally, add dollops of extra ricotta cheese and some tomato sauce on top for color and flavor.

Bake in a 350°F oven for about 25 minutes until the cheese is gooey and the top is brown.
