Bell peppers are milder and more affordable.
Season one side of the pork chops with salt, black pepper, and garlic flakes.
Heat olive oil in a skillet over medium heat.
Add the pork chops to the pan, seasoning the other side once they are in the pan.
Flip the pork chops about two times to ensure even cooking.
Remove the pork chops from the pan and let them rest.
In the same pan, add 2 tablespoons of olive oil, chopped onions, chopped tomatoes, and chopped pickled jalapenos.
Add the pickled juice to the vegetables and season with salt, black pepper, and garlic flakes.
Add 1 tablespoon of chicken bouillon and half a cup of water to the vegetable mixture.
Simmer the vegetable mixture for about 2 minutes.
Add the pork chops back to the pan, placing them on top of the vegetables.
Cover the pork chops with the vegetable sauce and reduce heat to low, adding fresh cilantro on top.
Let sit on low heat for about 2 minutes before serving.
