Place onions and parsley in a food processor and mince until thick paste.
Add minced meat, parsley, onion paste, breadcrumbs, and spices to a bowl; mix with hands until combined.
Chop the potatoes in half and slice into equal slices, keeping them together with the following slice.
Crack eggs in a bowl and add salt and pepper.
Grease baking tray with corn oil.
Fill the potato slices with the minced meat mixture, being careful not to overfill.
Cover the minced meat with the matching potato slice.
Dip the filled potato in the egg mix and then in breadcrumbs, coating the edges only.
Add each filled potato to the baking tray.
Top the potatoes with oil using a pastry brush.
Place in the oven at 200° C (390° F) and flip after 12 minutes; cook for another 12 minutes or until golden brown.
