Cuban-style liver, or Hígado a la Cubana, is a beloved dish that reflects the rich culinary heritage of Cuba, where organ meats are celebrated for their flavor and affordability. Traditionally served with rice, this dish is a staple in many Cuban households, often enjoyed during family gatherings. Its vibrant flavors, enhanced by lime and spices, make it a comforting meal that resonates with both nostalgia and cultural pride. Today, variations exist across the Caribbean and Latin America, showcasing the adaptability of this hearty dish.

Chicken liver is lower in fat, while pork liver is often less expensive.

Broth adds flavor without alcohol, while water is a budget-friendly option.
Thaw the frozen beef liver and cut it in half for easier handling.
Heat olive oil in a skillet over medium heat until hot.
Season one side of the liver with salt and black pepper.
Place the seasoned side of the liver down in the skillet; it should sizzle immediately.
Season the other side of the liver with salt and black pepper.
Cook the liver for about 1 minute on one side, then flip it over and cook for another minute until browned but still pink inside.
Remove the liver from the skillet and set it aside.
In the same skillet, add sliced onions and both green and red bell peppers; sauté for a few minutes until softened.
Add large chunks of garlic to the skillet and cook for an additional 2 minutes.
Increase the heat to medium-high and add rice vinegar to the skillet; stir well.
Return the liver to the skillet, slicing it into strips as you add it back in.
Add a little water to the skillet to create some bubbling action and cover it to cook for a few more minutes.
Taste the dish and adjust seasoning if necessary; serve over rice.
