1

Start by chopping a whole onion using a hand blender attachment in two sessions: one for a fine cut and one for a coarser cut.

2

Combine the chopped onion and garlic into a medium-sized mixing bowl.

3

Remove the casing from the chorizo and smash it with the side of a blade to break it down, then add it to the mixing bowl.

4

Add salt, onion powder, garlic powder, oregano, cumin, black pepper, and paprika to the bowl with the meat mixture.

5

Mix all the ingredients well in the bowl to form the patty mixture.

6

Form the mixture into meatballs and allow them to rest in the fridge for about half an hour to an hour before frying.

7

Heat the flat top grill to medium heat (setting number five).

8

Once heated, place the meatballs on the grill and smash them with a large spatula.

9

Cook the patties for about 3 minutes, watching for browning around the edges as an indicator to flip them.

10

Once flipped, add a handful of onions on top of each patty, cover with the sauce, and cook for another 3 minutes.

11

Serve the fritas in hard round Cuban bread topped with a mountain of julienned fries and a healthy dose of ketchup.
