1lb tin of peaches (450g)
Two large oranges
1lb of sponge cake (450g)
1 pint of milk (586ml)
½ pint of fresh cream (300ml)
2 tablespoons of custard powder (30g)
1oz Icing/Powder Sugar (30g)
1 teaspoon of vanilla essence
1.7 fl.oz Sherry (50ml) (optional)
Fresh Strawberries
Sprinkles

Cut up and dice the sponge cake.

Liquidise the peaches.

Liquidise the strawberries.

Into a large glass bowl build alternative layers of sponge and liquidised fruit.

Add 1 pint of milk, 1oz (30g) of custard powder and 1 teaspoon of vanilla essence to a saucepan.

Heat over medium heat, stirring constantly to make the vanilla custard.

Place into a refrigerator for at least 1 hour or until the custard sets.

Add ½ pint of fresh cream and 1oz (30g) of Icing/Powder Sugar to a glass bowl.

Gently whisk until the cream becomes 'whipped'.

Pour the cream on top of the cold custard.

Decorate with sliced strawberries and sprinkles.

Keep refrigerated.
