Heat a large pan to seal off the marinated mutton without adding oil, allowing the fat from the mutton to cook it.

Once the mutton is browned and starting to stick, transfer it to a smaller pan.

Deglaze the pan with boiling water to cover the meat and scrape up any stuck bits.

Add the chopped potatoes and bell peppers to the smaller pan with the mutton and stir.

Add more boiling water to ensure everything is covered, then taste and adjust seasoning with all-purpose seasoning if needed.

Cover the pan and simmer for 2 to 3 hours until the mutton is tender and the gravy thickens.
