1 tsp garam masala
1 tsp ground coriander
1 tsp turmeric
1 tsp dried thyme
1/2 tsp black pepper
1 tsp chilli flakes
1 onion
1 spring onion
3 garlic
6 sprigs of thyme
1 tomato
2 carrots
2 potatoes
7 pimento seeds
1 scotch bonnet
4 tbsp oil
2 tbsp olive oil
1 1/2 lamb stock cube
1 1/2 cup hot water

In a large pot, heat oil over medium heat.

Add the marinated mutton chops and brown on all sides.

Remove the chops and set aside; in the same pot, add chopped onion and sauté until translucent.

Stir in garlic and thyme; cook until fragrant.

Add chopped scotch bonnet, carrots, and potatoes; sauté for a few minutes.

Return the mutton to the pot and mix well with the vegetables.

Add chopped tomatoes, pimento seeds, and lamb stock cube with hot water; bring to a simmer.

Cover and slow cook for about 2 hours until the mutton is tender.
