Today, variations exist across East Africa, with each region adding its unique twist, making Mandazi a cherished treat that connects communities.

Dissolve the dry yeast in warm water.
In a bowl, beat the egg and incorporate the coconut milk.
Add the sugar and mix well, then pour in the vegetable oil and stir.
Divide the flour; to 2 cups of flour, add the ground cinnamon and pour in the yeast mixture.
Gradually add the egg mixture and the remaining cup of flour while mixing until you get a dough that is not too sticky.
Transfer the dough to a flat area and knead for 15 minutes until the dough is soft and elastic.
Cover the dough with a napkin or aluminum foil and let it rise for about 45 minutes.
Divide the dough into small balls and use a rolling pin to flatten each ball into a thick circle.
Use a sharp knife or cookie cutter to shape the dough into triangles or circles.
Heat the vegetable oil on medium-high heat and fry the mandazi until golden brown.
Remove and place on paper towels to absorb excess oil.
