In a bowl, combine 200 grams of all-purpose flour with a pinch of salt.

Add 0.5 tablespoon of caster sugar and 2 tablespoons of potato starch or corn flour.

Mix in 1 teaspoon of baking powder and 10 grams of fresh yeast (or 5 grams of dry yeast diluted in warm water).

Add 20 grams of milk powder and 2 tablespoons of vegetable oil to the bowl.

Pour in 225 grams of warm water (about 35 degrees) and mix well.

Scrape the inside of half of a vanilla pod into the mixture and stir until the dough is elastic.

Cover the bowl with a cloth or plastic wrap and let it rest for one hour.

After one hour, check the dough for fermentation and remove the vanilla pod.

Transfer the liquid dough into a plastic bottle with a nozzle by melting a hole in the cap.

Heat oil to 170 degrees Celsius for frying.

Dip scissors in the hot oil to prevent sticking, then cut small pieces of dough into the oil.

Fry the dough balls, moving them around for even cooking.

Prepare the syrup by boiling 300 grams of sugar and 150 grams of water until it thickens.

Add date syrup and a bit of lemon juice to the syrup to balance sweetness.

Once the dough balls are cooked, dip them again in the hot oil for a second fry to ensure they are crispy.

Drain the fried dough balls well before coating them in the syrup with a rubber spatula.
