Cut pumpernickel bread into strips or cubes.

Heat oil in a skillet over medium heat until shimmering.

Add bread pieces to the skillet and fry until golden brown, about 3-4 minutes.

Remove the bread from the skillet and drain on paper towels.

In the same skillet, melt butter over low heat.

Add minced garlic and sauté until fragrant, about 1 minute.

Sprinkle parmesan over the fried bread and return to the skillet.

Cover and cook until cheese melts, about 2-3 minutes.
