Heat olive oil and butter in a large skillet over medium heat until shimmering.

Season chicken pieces with salt and black pepper.

Add chicken to the skillet and brown on all sides, about 5-7 minutes per side.

Remove chicken from skillet and set aside.

In the same skillet, add shallots and sauté until translucent, about 3 minutes.

Add garlic and mushrooms, cooking until mushrooms are browned, about 4 minutes.

Pour in white wine, scraping up browned bits from the bottom, and simmer until reduced by half, about 3-5 minutes.

Stir in tomatoes and chicken stock, then return chicken to the skillet.

Add fresh herbs and bring to a simmer.

Cover and cook on low heat until chicken is cooked through, about 30 minutes.

Adjust seasoning with salt and pepper as needed.

Serve hot, garnished with additional herbs if desired.
