250 ml White wine
400 ml Chicken stock
4 Roma tomatoes

Add salt and black pepper to the chicken quarters.

Cook the chicken quarters on both sides in the pan and set them aside.

Cook the white onion, garlic and shallots.

Add butter and let it melt.

Add mushrooms and cook this till it has some color.

Add tomato concentrate and flour. Mix this.

Add the white wine and chicken stock. Mix this and add the chicken quarters back to the pan. Add the lid to the pan.

Add the fire to medium low heat and cook this for 1 hour.

In the mean time you can prepare the tomatoes. Add a small cross in the bottom side of the tomato, cook them in boiled water for 10 seconds and transfer them to ice water. Let the tomatoes cool down.

Now you can cut off the top part of the tomatoes and take off the skin. Cut the tomato in quarters and cut out the seeds.

When the chicken is done take them out. Add the tomatoes together with fresh parsley and tarragon. Mix this and add the chicken back. Let this marinate for 15 minutes. The best is to eat it the next day.
