Cut chicken breasts in half to create chunky pieces.

Slice 2 large shallots or use 2 small onions.

Cut 150 g of mushrooms into quarters.

Peel and chop 2 tomatoes, optionally removing the seeds.

Put 3 tablespoons of plain flour in a plastic bag and season with salt and pepper.

Add a chicken piece to the bag, shake well, then remove and place on a plate. Repeat with remaining chicken pieces.

Heat 1 tablespoon of olive oil in a large pan over medium heat.

Add the floured chicken pieces to the pan and cook for about 3-4 minutes on each side until golden, turning only once.

After about 3 minutes, turn the chicken pieces over and cook for another 3 minutes.

Remove the chicken to a plate or dish.

Add another tablespoon of olive oil to the pan along with the shallots, mushrooms, and garlic, cooking until golden.

Return the chicken to the pan with any juices.

Add 1/2 cup (125 ml) of water and crumble in the chicken stock cube.

Pour in 1/4 cup of alcohol-free white wine (or regular white wine or water).

Add the chopped tomatoes and spread them around the pan.

Cover and cook on very low heat for about 20 minutes or until the chicken is cooked through.

After 20 minutes, check that the chicken is cooked and adjust seasoning if necessary.
