25 g shallots, peeled and chopped
2 garlic cloves, finely chopped
2 tbsp white wine
120 g small mushrooms, thinly sliced
2 tomatoes, seeded and chopped
100 ml chicken stock
2 tsp fresh tarragon
a knob of butter

Break up the chicken, using only 2 breasts for this recipe, leaving as much skin as possible on the breast.

Preheat the oven to 220° Centigrade.

Season the chicken breasts with a little olive oil, then generously season both sides with salt and pepper.

Pan fry only the skin side of the chicken for 2 to 3 minutes on medium heat until light brown.

Transfer the pan to the oven and cook for 15 minutes, placing it on the floor of the oven.

After 15 minutes, turn the chicken over and cook for a further 2 minutes.

In a separate frying pan, heat olive oil for a few minutes, then add the mushrooms and a knob of butter.

Add the shallots to the heated oil and sauté for 1-2 minutes, then add the garlic, seasoning with salt and pepper.

Pour in the white wine and allow to cook for about half a minute.
