1 organic lemon
1/2 cup oat flour
1/2 cup vanilla protein powder
1/3 cup cashew butter
1/4 cup maple syrup
2 Tbsp ground flax seed
2 Tbsp fresh lemon juice
1 Tbsp lemon zest
1 Tbsp coconut oil
1 tsp vanilla extract
1/4 tsp salt
2 Tbsp white chocolate melting wafers
1 tsp coconut oil (for chocolate drizzle)
coarse sea salt (for topping)

Zest one organic lemon using a zestester.

Cut the lemon in half and juice it into a bowl using a lemon juicer.

In a food processor, combine 1/2 cup oat flour, 1/2 cup vanilla protein powder, 1/3 cup cashew butter, 1/4 cup maple syrup, 2 Tbsp ground flax seed, 2 Tbsp fresh lemon juice, 1 Tbsp lemon zest, 1 Tbsp coconut oil, 1 tsp vanilla extract, and 1/4 tsp salt.

Blend the mixture on high until well mixed, until it starts to ball up in the middle.

If the mixture is too wet, add 2 more tablespoons of oat flour and blend again until the right consistency is reached.

Line a 4x8 inch bread pan with parchment paper and scoop the mixture into the pan.

Press the mixture down evenly with your hand and smooth it out with a spatula.

Place the pan in the freezer for 5 to 10 minutes to firm up the mixture before slicing.

In a microwave-safe bowl, combine 2 Tbsp white chocolate melting wafers and 1 tsp coconut oil.

Microwave for 25 seconds, stir, then microwave for another 25 seconds until melted, stirring until smooth.

Remove the bars from the freezer and cut them into six pieces.

Drizzle the melted white chocolate over the bars using a spoon.

Sprinkle coarse sea salt and additional lemon zest on top of the bars.
