Heat olive oil in a large skillet over medium heat until shimmering.
Season chicken with salt and black pepper, then add to the skillet skin-side down.
Brown chicken for 5-7 minutes until golden, then flip and cook for another 5 minutes.
Remove chicken and set aside, leaving the fat in the skillet.
Add chopped onion and garlic to the skillet, sauté until translucent, about 3-4 minutes.
Stir in sliced bell peppers and cook until softened, about 5 minutes.
Add diced tomatoes, red wine, black olives, capers, oregano, and bay leaves.
Return chicken to the skillet, nestling it among the vegetables.
Cover and simmer for 30-35 minutes, until chicken is cooked through and tender.
Remove lid and cook for an additional 10 minutes to thicken sauce, if desired.
Sprinkle with chopped parsley before serving.
Serve hot with crusty bread or over rice.
