White Bean Soup

350 grams white beans
2 stalks celery
2 small carrots
2 cloves garlic
olive oil

Soak 350 grams of white beans in water for a while.

Chop onions finely.

Chop 2 stalks of well-washed and peeled celery finely.

Cut 2 small carrots into cubes.

Chop 2 cloves of garlic.

Heat a pot over medium flame.

Pour in olive oil and add some butter.

Wait until the butter is shimmering and oil is sizzling.

Add the chopped vegetables to the pan and fry until golden brown.

Add salt and pepper to taste.

Grate ripe firm tomatoes on a coarse grater and add to the pot with vegetables.

Add a little more tomato paste to enhance the flavor of the soup.

Add Italian herbs and sweet paprika to the pot.

Cook for 10–12 minutes.

Add the soaked white beans to the pot with all ingredients.

Pour in hot broth or water and cook until soft.

Finely chop the spinach and add to the pot.
