4 garlic cloves diced
1 potato diced into cubes
15oz / 425g can whole peeled tomatoes
2 tablespoons extra virgin olive oil
1 sprig of fresh rosemary or thyme
1 bay leaf
Salt and black pepper to taste
*Optional parmesan rind square
*Optional garnish of grated parmesan cheese
