German Beef Goulash

Heat canola oil in a large pot over medium heat until shimmering.
Add diced beef and brown on all sides, about 5-7 minutes.
Remove beef and set aside, then add chopped onions and garlic to the pot.
Sauté onions until translucent, about 3-4 minutes.
Stir in flour and cook for 1 minute to form a roux.
Add tomato paste and bay leaves, cooking for another 3-4 minutes.
Return beef to the pot, then add brown stock.
Stir in sweet paprika powder and season with salt and black pepper to taste.
Bring to a simmer, cover, and reduce heat to low.
Cook for 1.5 to 2 hours, stirring occasionally, until beef is tender.
Adjust seasoning if necessary before serving and garnish with sour cream.
