2 1/2 Cups Walnuts, Ground (200 grams)
1 Cup Sugar (200 grams)
2 Cups+2 Tbsp. Unsweetened, Shredded Coconut (200 grams)
3 tsp Baking Powder (12 grams)
1 tsp Vanilla Bean Paste or Extract (5ml)
1 Cup Boiling Water (250 ml)
Filo Pastry (500 grams)
Sunflower or Vegetable Oil (1/3-1/2 Cup)
2 1/2 Cup Water (600 grams)
3 Cups Sugar (600 grams)
1 tsp Vanilla Extract (5 ml)

Preheat the oven to 350°F (175°C).

Grease a baking dish with melted butter.

Layer sheets of phyllo dough in the dish, brushing each layer with butter.

Chop walnuts and pistachios, then mix with cinnamon.

Spread a layer of the nut mixture over the phyllo layers.

Continue layering phyllo and nut mixture until all ingredients are used, finishing with phyllo on top.

Cut the baklava into diamond shapes with a sharp knife.

While baking, combine sugar, water, honey, lemon juice, and vanilla in a saucepan.
