Cut the ends off the ripe plantains and slice them without cutting all the way through, into thick pieces.
Soak the raisins in water for a while.
Heat oil in a skillet for frying the plantains.
Fry the plantains until golden brown, turning them carefully with your hands.
Place fried plantains on a plate lined with paper towels to absorb excess oil.
In a separate pot, add 4 cups of water and bring to a boil.
Add 1 pound of panela and stir until dissolved, adjusting sweetness to taste.
Add 1/4 teaspoon of salt to the panela mixture and stir.
Add the fried plantains to the panela mixture and cover to simmer for about 10 minutes.
After 10 minutes, add the soaked raisins and cook for an additional 5 minutes.
