Place a pan over medium-high flame and add 2 tablespoons of olive oil.
Wait for the oil to get hot.
Add 1 medium onion and cook for around 1 minute until soft.
Add 500 grams of boneless beef to the pan and cook for around 1 minute, stirring.
Add garlic and ginger paste and toss everything together, cooking for 4-5 minutes until beef is well cooked.
Add a seasoning cube, a little more salt, and cayenne powder, stirring to combine.
Add 3 tomatoes and a splash of water, then let the tomatoes cook for around 1 minute.
Add 2 tablespoons of peanut butter and some water, stirring everything together.
Wait for around 1 minute for the stew to come to a boil, then check the seasoning and adjust if necessary.
Let the groundnut stew simmer on low for around 3 more minutes.
Finish with some coriander for color and flavor, then turn off the heat.
Serve the groundnut stew hot, paired with fufu.
