Beer Braised Pork Carnitas

3-4 lbs pork shoulder or pork butt cut into 2 inch cubes
Salt and pepper to taste
1 Dried Mexican Ancho Chili soaked, drained, seeds and stem removed and minced (optional)
1 yellow onion peeled and chopped
4 cloves garlic smashed
1 tsp ground cumin
1 tsp dried oregano
1 tsp chili powder
1/4 tsp ground cloves
2 bay leaves
1-2 cups beer (lager, ale, or cider)
Juice of 1 orange
Juice of 1 lime

Braise the pork with the seasonings in your chosen method (oven, Instant Pot, or slow cooker).

Remove the pork from the braising liquid and shred.

Crisp up the shredded pork by brushing with braising liquid and broiling or cooking a few extra minutes until edges are nice and crisp.
