Preheat the oven to 400°F (204°C).
Cook bacon on a sheet tray for 15 to 20 minutes until crispy.
In a saucepan over low to medium heat, melt butter.
Whisk in all-purpose flour and cook for 1 minute.
Whisk in milk, parmesan cheese, and swiss cheese, cooking for 3 to 4 minutes until thickened.
Remove from heat and season with salt to taste.
Butterfly the chicken breast and tenderize it using the back of a knife.
Place the chicken between parchment or plastic wrap and pound it to about 1/4 inch thick.
Season the chicken with salt, pepper, fresh rosemary, and thyme.
Dust both sides of the chicken with all-purpose flour.
Lightly coat the chicken with egg wash and then coat with panko bread crumbs.
Shallow fry the chicken in medium to high heat for 3 to 4 minutes on each side until golden brown.
Transfer the fried chicken to a tray with paper towels.
Fry rosemary to garnish and season the chicken with salt while hot.
Prepare the bread loaf by removing some of the breadcrumb to make space for filling.
Drizzle olive oil over the top of the bread and sprinkle with cracked black pepper.
Toast the bread under the broiler until crispy around the edges.
Place the fried chicken on top of the toasted bread.
Add sliced tomatoes and torch them for a bit of char.
Pour the cream sauce over the sandwich and add a few slices of swiss cheese.
Broil the sandwich for 2 to 3 minutes until bubbly and golden brown.
Top the sandwich with crispy bacon and fried herbs.
